This is a recipe that my mother-in-law introduced me to. As much as I try, I can never seem to make it as good as she can! But still, it is a summer favorite because it is so light and refreshing on a hot day.
You will need:
- 1 large cucumber peeled and thinly sliced
- Half of a small red onion thinly sliced
- 1/4 cup salad vinegar
- 1/4 tsp ground pepper
- 1/4 tsp sugar
- Big pinch of salt
- Red Pepper Flakes to taste (optional)
When slicing your onion or cucumber you can use a knife, but I like mine paper thin, so I use a vegetable peeler! Give it a try!
