Greek Salad Dressing

This is a really easy salad dressing you can make that doesn’t have to be refrigerated.  I really like to use an arugula and kale mix for my salad base then top with sliced cucumbers, cherry tomatoes, sliced red onions, black olives, sliced red bell pepper and  feta cheese.   If I’m feeling really fancy, I’ll add in some artichoke hearts, diced zucchini, croutons and Greek peppers.  For a larger meal, you could also add grilled chicken (marinated with the dressing!) or strips of salami.

Greek Salad Dressing

  • 1 cup Olive Oil
  • 3 tsp Garlic Powder
  • 3 tsp Dried Oregano
  • 3 tsp Dried Basil
  • 2 tsp Ground Pepper
  • 2 tsp Salt
  • 2 tsp Onion Powder
  • 2 tsp Dijon Mustard
  • 1 cup Red Wine Vinegar

Combine all ingredients into a liquid container and shake.  I use an old glass olive oil bottle.

Also, when  J.O brings a salad for lunch, I put the dressing  in a traveling shampoo bottle!  It’s leak proof, fits in a lunch pail and he can easily pour it onto his salad.  You can buy them for under $1 in any traveling section at your local drug store (Target, Walgreens, CVS, etc).
