Pistachio Fluff

This tasty and light dessert is great to serve after any Italian inspired meal or on a hot summers day.  We were first introduced to a version of it at our friends Trinity and Tracy’s home last summer.  It’s so easy to make and so rewarding, especially if you like pistachio!

You’ll need:

  • 1 8oz tub of Cool Whip (we use Cool Whip Lite)
  • 1 3.4oz package of Jell-O Instant Pudding: Pistachio Flavored
  • 1 8oz can of chopped Pineapple, drained
  1. In a large mixing bowl, fully combine all ingredients.Pistachio Fluff

That’s it!  It’s an easy and delicious treat any time of the year!

  3. We’ve been making this dessert for years. It’s always a big hit with our guest. It’s so easy to make and it’s not expensive. For special occasions we decorate it with strawberries cut in halves.

  4. A recipe from the past with warm fuzzy memories, thanks for posting! I needed to lighten it so used sugar free pudding, Lite Cool Whip and Libby’s Skinny Fruits crushed pineapple. I sometimes add low fat cottage cheese.
